Curried Halloumi & Spinach

Pan fried halloumi is such a treat, it takes on such a gorgeous texture and the pan frying process gives us the perfect opportunity to add bags of flavour to this versatile cheese. So here, I have pan fried it in indian spices to create a delicious vegetarian curry that will peak the interests of any carnivore. 

Ingredients

  • Halloumi cheese, 2 slices

  • 2 tsp of korma curry powder

  • Handful of spinach

  • Splash of single cream

  • Olive oil

  • Salt & pepper

Recipe

Pan fry the halloumi over a medium heat in a splash of olive oil with 1 tsp of curry powder, a pinch of salt and some cracked black pepper. Cook evenly on both sides and once it starts to brown, remove from the pan.

Using the same pan, add some more olive oil if necessary, then add the spinach, half a teaspoon of curry powder and stir until it starts to wilt. At this point, add a splash of cream and stir for 30 seconds to create a creamy curry infused sauce.

Season if required, then serve the halloumi on a bed of creamy curried spinach.
