Chicken parmigiana
This is lazy cooking at it’s tastiest! Crispy potatoes, luxurious melted mozzarella and a tangy tomato sauce all cooked on one tray in the oven.
Ingredients
1 chicken thigh, de-boned, skin on
1 potato, cubed
4 tbsp passata
¼ of a mozzarella ball
1 tsp oregano
Salt & pepper
Olive oil

Pre-heat your oven to 190c
Place the chicken thigh and cubed potatoes on your baking tray and season generously with salt and pepper, then drizzle with olive oil and cook in the oven to about 30 minutes turning the potatoes every so often. When the chicken is cooked and the potatoes are golden brown, throw some passata over the chicken, along with some mozzarella and then sprinkle over some oregano. Return to the oven for a couple of minutes until the mozzarella has melted, then serve.
