Sticky Peanut Butter Tofu
I’m not sure it’s possible to get any more flavour to stick to a cube of tofu than with my sticky peanut tofu recipe.
To make 1 portion
½ mug basmati rice
1 mug water
100g tofu
Sesame oil
1 garlic clove
1 tbsp peanut butter
1 tbsp golden syrup
Pinch of chilli flakes
¼ lime
1 tbsp soy sauce
Small handful of peanuts
To cook
First add the rice and water to a saucepan and cook with the lid on for about 5 minutes until all the water has been absorbed and the rice is cooked.
Meanwhile, pan fry the tofu in a splash of sesame oil with the garlic over a medium heat for a few minutes before adding the peanut butter, golden syrup, chilli flakes, a squeeze of lime juice and soy sauce. Continue to fry for a couple of minutes until the sauce thickens and sticks to the tofu, then serve with the rice and garnish with a sprinkle of peanuts.
